Sweet Almond Cakes with Berries
This is a work in progress and I will be making changes. It is so good right now though, that I could eat an entire batch in one sitting.
1 cup ground almonds (almond meal)
1 tsp baking powder
1/8 tsp salt
2 Tbl melted butter
1/4 cup water
3 tbl agave syrup
2 eggs
1/2 tsp vanilla
toasted almonds
Fresh or frozen berries sweetened with agave
- preheat oven to 350
- Combine almond meal, baking powder and salt
- Add melted butter, water, agave, eggs and vanilla -
Combine well
- Ladle into muffin pan lined with foil liners - fill about 3/4 full
- Bake 20 minutes until just set
- Wait 5 minutes, then remove from tin to a cooling rack
- Remove a cake from foil liner and place on a dessert plate
- Spoon some berries over the top and sprinkle with toasted almonds
Makes 8 regular muffins
Variation 1: Reduce agave to 1 Tbl which makes it less sweet and works as a nice breakfast muffin alone or with a fruit or cheese spread.
