Apple Chutney

If you ever eat indian food, you've probably had some sort of
chutney. It's a wonderful fruit based condiment that tastes
delicious with meats, curries and on bread. It is also a nice way
to use home grown fruit.
Approximately 4 medium granny smith apples
1 large onion, chopped
1 garlic clove, minced
1 tsp - 1 Tbl ginger
salt (not more than 1/2 tsp)
1/2 - 2 tsp mustard seeds
1/2 hot red jalapeno or 1/2 tsp hot red peper flakes
1/2 cup apple cider vinegar
1/2 cup + 2Tbl sugar
1 tsp ground cinnamon
1 1/2 tsp ground allspice
1/2 cup or more dried cranberries and tart cherries combined
1 Tbl canola or olive oil
- In a small saucepan, combine sugar and vinegar and heat stirring until
sugar is completely dissolved
- Place mustard seeds in the bottom of a medium skillet or sauce pan
over medium high heat
- When seeds start to pop, add oil
- Sauté onion and apple with a little salt until softened - do not
brown!
- Add garlic and cook briefly
- Add vinegar/sugar mixture and remaining ingredients
- Bring to low boil, reduce heat to medium
- Continue to cook uncovered, liquid should remain at a low boil,
reducing the head as needed to avoid scorching
- Cook until all liquid has evaporated (perhaps about 40 minutes to 1
hour)
- Allow to cool and serve at room temperature of chilled with meats or
bread
