Artichoke & Tuna Salad



A simple take-off on artichoke spread. It can be served on bread or fresh greens dressed with lemon and olive oil.

2 6-7 oz. cans of Tuna in water
1 14-15 oz. can artichoke hearts
2 tablespoons (or to taste) good quality mayonnaise
1/4 cup grated parmesan cheese
2 tsp fresh thyme leaves, lightly chopped (optional)
Lemon juice (optional)
freshly ground black pepper
  • Drain tuna
  • If artichoke hearts are whole, quarter them
  • Combine tuna, artichoke hearts, mayonnaise, parmesan, black pepper and thyme
  • Add lemon juice if desired to adjust consistency
  • Mix well and chill slightly
