Arugula with Dried Cherry Salad

This is one of my favorite quick lunches. It can be prepared in no
time and can be served warm or at room temperature.
Arugula
Dried Cherries
Lemon
Olive Oil
Kosher Salt
- Tear arugula leaves into bite sized pieces and place onto a serving
plate
- Sprinkle on dried cherries
- Squeeze lemon juice over the top
- Drizzle with a very small amount of olive oil
- If serving warm, place in the microwave for about 20 seconds
- If serving at room temperature, proceed
- Sprinkle with a pinch or two of salt
