Avocado 'Tillas

2 avocados
2 cups grape or cherry tomatoes
1 large finely minced shallot
2 tsp mayonnaise
1 lime or meyer lemon
1/4 cup minced cilantro leaves
Kosher salt to taste
Large (2-3 inch) tortilla chips*
*The chips for this recipe can be purchased or you can make
them from corn tortillas cut into quarters. Brush with olive oil and
bake until crisp.
Cut avocados in half, remove seeds and scoop out flesh with a
large spoon. Mash half of one of the avocados.
Dice the remaining
three halves and add to the mashed avocado.
Zest the lime or lemon and add to the avocado
Add juice of the lime or lemon to keep the avocado from
browning
Cut grape tomatos into quarters and add to the avocado
Add mayonnaise, shallots and half the cilantro
Stir to combine well
Taste and add salt as needed
Place a tablespoon or so of the avocado on each tortilla chip
and place on a serving tray
Sprinkle remaining cilantro over the top
