Avocado 'Tillas

2 avocados
2 cups grape or cherry tomatoes
1 large finely minced shallot
2 tsp mayonnaise
1 lime or meyer lemon
1/4 cup minced cilantro leaves
Kosher salt to taste Large (2-3 inch) tortilla chips*
  • *The chips for this recipe can be purchased or you can make them from corn tortillas cut into quarters. Brush with olive oil and bake until crisp.
  • Cut avocados in half, remove seeds and scoop out flesh with a large spoon. Mash half of one of the avocados.
  • Dice the remaining three halves and add to the mashed avocado.
  • Zest the lime or lemon and add to the avocado
  • Add juice of the lime or lemon to keep the avocado from browning
  • Cut grape tomatos into quarters and add to the avocado
  • Add mayonnaise, shallots and half the cilantro
  • Stir to combine well
  • Taste and add salt as needed
  • Place a tablespoon or so of the avocado on each tortilla chip and place on a serving tray
  • Sprinkle remaining cilantro over the top
