Easy Baked Apples

This is a pretty simple dish and if you don't go overboard with
the sweetener, reasonable for a dessert or breakfast food. I
recommend Earth Balance Soy Margarine cubes to make this recipe
especially easy.
Approximately 3 medium granny smith apples
4 tbl brown sugar, lightly packed
2/3 cup sultanas or raisins
1/2 cup chopped unsalted walnuts, peanuts or pecans
3/4 tsp ground cinnamon
2 Tbl soy margarine cut into 6 equal pieces
1 1/2 cups water or apple juice
- Preheat oven to 375º
- In a small bowl combine brown sugar and cinnamon
- Cut apples in half (do not peel) and using a melon baller, remove the core
- With a paring knife, notch out the stem and blossom ends, but retain
the bowl shape in the center of the apple
- Place apples into a shallow baking dish
- Distribute the sultanas and nuts in the cavities of the apple halves
- Place 2 tsp sugar mixture on each apple over the sultanas and nuts
- Top each center with one teaspoon of soy margarine
- Pour water or apple juice around apples
- Bake until apples are soft and sugar has spread over the top and
melted fully (approx. 30-50 minutes)
Serve with a decadent Late Harvest Sauvignon Blanc.
