Baked Kohlrabi Chips

These are so delicious!

2 medium kohlrabi, peeled and sliced very thin on a mandoline
Olive Oil
Kosher salt & Fresh black pepper
  • Preheat oven to 375º
  • Spray or brush lightly with oil 2 baking trays
  • Spread kohlrabi slices in a single layer on the trays
  • Spray or lightly brush tops of each slice with oil
  • Bake turning once until chips are beginning to brown around the edges
    These cook to about the same texture as sweet potato chips
