Baked Tilapia with Lime and Cilantro Pesto

Serves 2 - 3
1 lb. tilapia fillets
Zest and juice from two limes
1 large clove garlic, minced
1/2 tsp salt
1/4-1/2 tsp cayenne pepper
1/4 cup very finely minced fresh cilantro leaves
1-2 tbl olive oil
- Preheat oven to 350º
- Pat fillets dry with paper towels
- Combine remaining ingredients to form a paste (pesto)
- Brush about 1 tbl of the cilantro pesto over the bottom of a baking dish
- Place dry fillets in baking dish in a single layer
- Pour remaining pesto over the fillets and rub or brush to cover
- Cover pan with foil
- Bake for 20-30 minutes until done to your taste
Garnish with lime wedges and fresh leaves of cilantro if desired
