Baked Salmon & Mushrooms

1/2 - 1 lb. fresh crimini mushrooms
1/2 onion sliced or chopped
Olive Oil or butter for sauteing
2 lbs. Salmon fillets
Salt & Pepper
1/4 cup melted butter or other flavorful fat
2 tbl Lemon Juice
  • Saute mushrooms and onion in olive oil or butter
  • Butter a baking dish large enough to lay salmon fillets flat in a single layer
  • Sprinkle salmon on both sides with salt & pepper and lay into greased baking dish
  • Spread the sauted mushrooms & onions over the top of the salmon
  • Combine the melted butter and lemon juice and pour over the top
  • Bake in a preheated 350 oven for 30 - 35 minutes or until the fish flakes

    Serves 6
