Baked Spinach

1 1/4 lb. spinach
1/4 cup flour
3 eggs, beaten
3/4 cup cheddar cheese, shredded
1/2 cup dried bread crumbs
2 Tbl. fresh parsley, chopped (optional)
1/4 cup melted butter
1 cup milk
1/2 tsp. salt
1/8 tsp. ground black pepper
Parmesan cheese, grated
  • Preheat oven to 350
  • Grease a 2 quart baking dish
  • Clean spinach thoroughly, remove excess water and chop.
  • Layer spinach, flour, egg (& extra grated parmesan if desired). Repeat.
  • Combine cheese, bread crumbs and parsley and sprinkle over top.
  • Mix butter, milk, salt & pepper and pour over top.
  • Bake for 50 - 60 minutes.
