Baked Zucchini

6 small zucchini
16 oz. hot vegetable broth
2 tbl soybean margarine
2 tbl flour
1/2 - 1 cup grated cheddar cheese (optional)
Salt & pepper
  • In a sauce pan melt margarine over medium-low to medium heat. When margarine foams, add flour and mix very well.
  • Add a small amount of broth and whisk until no lumps remain and fully incorporated.
  • Continue whisking and adding broth until all broth is incorporated.
  • Cook over medium heat until sauce thickens. Add salt & pepper.
  • If using cheese add to the sauce now.
  • Remove from heat.
  • Clean zucchini and cut into 3/4 - 1 inch pieces
  • Place in a pan of boiling water for about 2-3 minutes.
  • Remove from pan and if not baking right away, place into ice water.
  • Place zucchini into a greased baking dish and pour sauce over the top. (You may not need all the sauce.)
  • Bake in a 350 oven for about 35 minutes or until tender and sauce has thickened.

    Canned soup can be used in place of this sauce.
