Baked Zucchini

6 small zucchini
16 oz. hot vegetable broth
2 tbl soybean margarine
2 tbl flour
1/2 - 1 cup grated cheddar cheese (optional)
Salt & pepper
- In a sauce pan melt margarine over medium-low to medium heat. When margarine foams, add flour and mix very well.
- Add a small amount of broth and whisk until no lumps remain and fully incorporated.
- Continue whisking and adding broth until all broth is incorporated.
- Cook over medium heat until sauce thickens. Add salt & pepper.
- If using cheese add to the sauce now.
- Remove from heat.
- Clean zucchini and cut into 3/4 - 1 inch pieces
- Place in a pan of boiling water for about 2-3 minutes.
- Remove from pan and if not baking right away, place into ice water.
- Place zucchini into a greased baking dish and pour sauce over the top. (You may not need all the sauce.)
- Bake in a 350 oven for about 35 minutes or until tender and sauce has thickened.
Canned soup can be used in place of this sauce.
