Banana Cake

This is a very moist cake, almost like a steamed pudding and is so delicious. It needs no icing, frosting or dusting of powdered sugar.

1/2 cup butter or margarine
1/2 cup dark brown sugar
3 eggs
4 bananas
2 tsp ground cinnamon
1 tsp baking powder
2 tbl boiling milk
1 1/2 cups unbleached white flour
1 tsp baking powder
  • preheat oven to 375
  • Melt butter and sugar together until sugar dissolves - cool slightly
  • Mash the bananas with cinnamon and add to the butter/sugar
  • Beat in the eggs
  • Bring milk to boiling in a saucepan
  • Add 1 tsp baking powder (watch out - this is a dramatic chemical reaction)
  • Add to banana mixture
  • Add 1 tsp baking powder to flour
  • Add flour to banana mixture and blend
  • Place in an 8 x 8 inch square pan and bake for 1 hour
  • Remove from oven and cool before slicing
