Banana Cake

This is a very moist cake, almost like a steamed pudding and is so delicious. It needs no icing, frosting or dusting of powdered sugar.
1/2 cup butter or margarine
1/2 cup dark brown sugar
3 eggs
4 bananas
2 tsp ground cinnamon
1 tsp baking powder
2 tbl boiling milk
1 1/2 cups unbleached white flour
1 tsp baking powder
- preheat oven to 375
- Melt butter and sugar together until sugar dissolves - cool slightly
- Mash the bananas with cinnamon and add to the butter/sugar
- Beat in the eggs
- Bring milk to boiling in a saucepan
- Add 1 tsp baking powder (watch out - this is a dramatic chemical reaction)
- Add to banana mixture
- Add 1 tsp baking powder to flour
- Add flour to banana mixture and blend
- Place in an 8 x 8 inch square pan and bake for 1 hour
- Remove from oven and cool before slicing
