Flank Steak Barbeque

This serves two people.

1 1/4 - 1 1/2 lb beef flank steak
1/2 cup olive oil
1/4 cup soy sauce
1/4 cup red wine vinegar
1/4 cup brown sugar
1/4 cup fresh minced ginger
1/4 cup fresh minced garlic
Oak wood chunks or twigs for smoking
  • I like this with oak, but any fruitwood would be fine to use. Soak the wood for an hour before using
  • The night before cooking, place flank steak into a ziplock bag and add all the marinade ingredients.
  • Press out all the air and seal the bag tightly
  • Massage the marinade all over the meat and refrigerate
  • In the morning, massage the marinade into the meat again and refrigerate until about 1 hour before cooking
  • Prepare the coals and bring the smoker to between 200 and 230 degrees
  • Remove the flank steak but reserve the marinade
  • Set the steak on a rack in a disposable baking dish
  • Add a small amount of water to the pan
  • Place soaked oak onto the coals and place the baking dish on the grill rack over the coals
  • Cook for about 1 1/2 - 2 hours
  • When the steak is nearly cooked, place reserved marinade into a small saucepan and bring to a boil
  • Reduce heat slightly and cook until the marinade is slightly reduced
  • Remove the steak from the grill and let stand about 5 minutes. Carve very thinly against the grain and serve with the sauce
