BBQ Sauce From Scratch

Fresh plum tomatoes (about 1 - 1 1/2 lbs)
Water to cover
1/2 tsp salt
Ground black pepper
1 tbl oil
1 onion
1 jalapeno (or more)
2 garlic cloves
2 tbl molasses
1/4 - 1/3 cup brown sugar
2-3 tbl worcestershire
1/2 tsp allspice
Pinch cinnamon
2 tbl balsamic vinegar
1 bottle sierra pale ale
2-3 tbl chili powder
salt and pepper to taste
- Peel tomatoes and place in pot with water to cover (about 1 cup water)
with salt and pepper
- Cook until thickened (about 30 minutes)
- Saute onion in oil until it begins to brown, add jalapeno and garlic and
continue sauteing until jalapeno is slightly softened (about 2 minutes)
- To tomato sauce, add molasses, brown sugar, allspice, cinnamon and worcestershire
add onion mixture to tomato mixture and combine well
bring to a low boil and reduce heat to med-low to low so it simmers gently
- add beer, chili powder, salt and pepper and simmer and reduce until desired consistency
(approx 1 - 2 hours)
