Blueberry Banana Muffins



These are a traditional style of muffin - not too sweet. You could sweeten it up by adding more sugar, or making a light powdered sugar icing, but they're pretty nice as is.

2 cups flour
2 tsp Baking Powder
1 tsp kosher salt
2 Tbl sugar
1/2 cup mashed, very ripe banana
1 egg
1/4 cup melted butter
1/2 cup milk
1 cup blueberries
  • Preheat the oven to 400
  • Combine first four ingredients and set aside
  • Combine banana, egg, melted butter and milk - mix well
  • Gently fold wet ingredients into dry ingredients until just mixed - don't overmix
  • Fold in blueberries
  • Fill greased muffin cups 2/3 full
  • Bake in preheated oven for 15 minutes. A toothpick should come out clean.
  • Cool 5 minutes in pan, then loosen edges with a knife and gently remove to a cooling rack.
