Breakfast Frittata

You can use anything you like or have on hand.

4-6 large eggs
1/2 cup onion, chopped
1/4 cup ham, chopped
1/4 cup red bell pepper, chopped
1/4-1/2 cup shredded cheddar cheese (or any cheese)
1 tbl fresh thyme leaves (or substitute any herb such as mint, basil, oregano, etc.)
1/4 tsp crushed red pepper flakes (optional)
1/2 tsp salt
Black Pepper to taste
Parmesan cheese (optional)
  • Prehead oven to 375
  • In a mixing bowl, lightly beat the eggs and add the remaining ingredients
  • Pour into a greased 8 x 8 inch casserole and bake for about 35-45 minutes, until lightly browned on top and center jiggles slightly
