Baked Canneloni

You can use home made pasta sheets for this and cut them into 4" x 5" rectangles. Place filling at one end, roll up leaving a slight overlap. Place into pan seam side down.
1 package no boil lasagna noodles (Ronzoni makes a good version)
1/2 recipe Besciamella Sauce
1 cup Basic Tomato Sauce (optional)
1/2 lb ground beef
1/2 lb ground pork
1/2 pkg frozen spinach
Salt & Pepper
Olive Oil
1/2 cup white wine
4 eggs
3/4 cup grated Parmesan
- Prepare the pasta according to package directions
- Add 2 tbl olive oil to a skillet and add ground meat. When browned, add spinach and cook about 3 minutes.
- Add wine and cook until it evaporates
- Add salt & pepper
- Remove meat mixture from pan, leaving juices and remaining fat in the skillet
- Mix eggs and half the parmesan into the meat mixture
- Fill the pasta tubes with the meat filling
- Grease the baking dish with olive oil and place canneloni in a single layer
- Pour skillet juices over the top
- Cover with Besciamella sauce
- Sprinkle with remaining parmesan
- Decorate with Basic Tomato Sauce
- Bake at 350 until hot and cheese has turned golden - about 20 minutes
