Cauliflower Gratin
A great way to low carb, lower fat comfort!
1 head cauliflower, leaves and core removed, broken into large florets
1 cup nonfat plain yogurt
1 cup grated dubliner cheese
1 tbl dijon mustard
1 tsp gound paprika
1 tsp kosher salt
- Steam cauliflower florets in a steamer basket sprinkled with 1/2 tsp kosher salt until just tender
- Arrange in a broiler safe gratin dish and cool to room temperature or slightly warmer
- Combine yogurt, cheese, mustard, pakrika and 1/2 tsp kosher salt
- Spoon yogurt mixture over top of cauliflower, spreading to cover all surfaces
- Broil for approx. 5 minutes about 6-8 inches from the broiler element until top is bubbly and cheese has melted (turn once to get even exposure)
