Cauliflower Mash

This is a fun and healthier alternative to mashed potatoes. You could use a food processor and create a more similar consistency to mashed potatoes, but we love it just mashed with a hand masher. Yumm!

1 head cauliflower, leaves and core removed, broken into large florets
1 cup chicken broth
2 tbl olive oil
1 cup grated parmesan or romano cheese
Milk or broth to adjust consistency
Kosher salt and black pepper
  • In a pot, place chicken broth and cauliflower
  • Bring broth to a boil, cover pot and cook until cauliflower is very tender
  • Turn off heat, add olive oil and using a potato masher, mash together
  • Add cheese and taste to adjust salt & pepper
  • If desired, use additional broth or milk to adjust consistency
