Simple Cheese Sauce

This is such a versatile dish to have in your repertoire. It can be used as a sauce or a dip and any flavor cheese can be used. I use vegetable broth in this to make it lighter, but using milk will give a richer sauce.

2 cups vegetable broth or milk
1 cup grated or finely diced cheese
2 tbl olive oil
1 tbl margarine or butter
2-3 tbl whole wheat or white unbleached flour
  • In a separate pan, or in the microwave, heat broth to just below the boil and keep warm
  • Place olive oil and margarine into a small saucepan and heat over medium
  • When margarine stops foaming, sprinkle in flour and whisk to coat flour with fat and remove any lumps
  • Allow flour to cook for a few minutes
  • Add 1/2 cup of the hot vegetable broth and whisk quickly to incorporate until no lumps remain
  • Add another 1/2 cup of the broth and aqain whisk until no lumps remain
  • At this point, you can add all the remaining broth and whisk
  • Continue heating until the sauce has thickened about 3-5 minutes
  • Add cheese and stir until melted - time will vary based on the type of cheese you use
  • Turn off heat - sauce will thicken as it stands

    Try using Gorgonzola or Brie as an alternative to the standard Cheddar cheese. This can be served with vegetables or with baked potatoes.
