This is a delightful, quick dish that makes busy days much easier. Tons of flavor. I recommend purchasing organic chicken, parts (very expensive) or organic whole chickens (inexpensive and easy to cut up). The flavor is much superior to non-organic products. Trader Joe's has decent pricing on organic chickens; whole or pieces.

6 boneless, skinless chicken thighs or 3 breasts
Oil
2 cloves garlic, minced
2 small anchovies
1/2 tsp red pepper flakes
1/2 cup chopped sun-dried tomatoes
1/2 cup pitted kalamata olives, chopped
1 1/2 tsp capers, lightly chopped
1/2 bottle fruity white wine (I use our 2005 Sauvignon Blanc)
2-3 Tbl fresh basil, chopped or torn
No salt is required for this dish!
  • Heat oil in a large skillet over medium heat and mash the anchovies into it
  • Make sure chicken is dry, then add to oil and brown lightly on both sides
  • Add garlic and red pepper flakes and turn the chicken to coat
  • Add wine, sun-dried tomatoes, olives and capers
  • Reduce heat to medium-low and cook until chicken is done
  • Turn off heat, top with basil

    Serve with Rice on the Side. Serves 2-3.
