Organic Chicken, Feta and Spinach Pizza



1/2 lb. organic chicken thigh meat, cut into 1 inch pieces
2 x 4 inch organic chicken sausages, casings removed
1/4 cup dry white wine
1 lb. organic fresh spinach leaves, cooked and drained well
1/3-1/2 cup greek feta block, diced
1/2 cup grated mozzarella cheese
1/4-1/3 cup grated parmesan cheese
1 tbl fresh oregano leaves, lightly chopped
1 clove garlic, grated
Olive oil
1 tbl fresh parsley, lightly chopped
1 medium Roma tomato, diced
1 recipe pizza dough Salt & Pepper
  • Place 2 tbl olive in a small bowl and add grated garlic and oregano - let stand
  • Preheat oven to 450-500º
  • Slice or break up chicken sausages
  • In a sauté pan, cook sausage in 1 tbl olive oil
  • Remove to paper towels to drain
  • Add chicken to hot pan and brown on all sides
  • Add white wine and 1/2 tsp salt and cover
  • Reduce heat and finish cooking chicken (this will only take a few minutes)
  • Remove chicken pieces to paper towel to drain
  • To assemble pizza, divide pizza dough and roll into two approximately 12 inch rounds (mine are never truly round!)
  • Brush with the olive oil/oregano mixture and add toppings. Start with grated mozzarella, then about half the grated cheese and half the feta, then add sausage, chicken and spinach. Top with remaining cheese
  • Sprinkle roma tomatoes over top and bake for about 10 minutes, until edges are lightly browned and cheese is just beginning to melt
  • Remove from oven and sprinkle with parsley
  • Let stand about 5 minutes before slicing
