Chili Corn Soup

This is so fast and is just packed with flavor. It really warms you up.

2 cans corn, drained, reserve liquid
2 cups vegetable broth
1 large onion, chopped
1/4 cup red bell pepper, chopped
1-3 jalapeno peppers, chopped
4 cloves garlic, chopped
Olive OIl
1/2 tsp ground cumin
1 tbl chili powder blend
1 16oz carton Imagine Creamy Corn Soup, or 2 cups soymilk
  • Saute onion and bell pepper in olive oil until softened
  • Add garlic and jalapeno and cook about 2-3 minutes
  • Add cumin and chili powder and stir
  • Add drained corn and cook about 2 minutes
  • Add reserved corn liquid and broth and simmer for about 20 minutes.
  • Add Creamy Corn Soup or soymilk and heat
  • Serve with chopped green onion, grated cheese and additional minced jalapeno

    If you don't care if this is vegetarian, you can use chicken broth and also serve minced ham or bacon. Fresh or frozen corn can be used instead. If using fresh white corn, you may prefer half-and-half instead of the Corn Soup or soymilk due to their sweetness.
