Jamie's Chocolate Pots

Jamie Oliver is one of my food heros. Fresh, simple and healthy are three words that describe his food. This is from one of his earlier cookbooks, but he has also most incredible recipes on his website. I've increased the recipe to serve 6 and substituted vanilla/cinnamon for the original recipe brandy (3tbl).

Use a chocolate bar with more than 70% cocoa content. I use TJ's organic dark chocolate bar with 73% cacao. 3 bars satisfy this recipe.

1 1/2 cups half & half
10.5 oz. chocolate
3 large egg yolks
2 tsp - 1 tbl vanilla extract + a pinch of cinnamon
2 tbl unsalted butter
  • Break or cut chocolate into pieces
  • Lightly beat egg yolks with vanilla/cinnamon
  • In a heavy saucepan scald the half & half (until just before it boils)
  • Remove from heat and set aside for 1 minute
  • Add chocolate and stir until melted and smooth
  • Cool slightly - few minutes - it still must be warm enough to melt the butter
  • Add butter and stir until smooth
  • Divide evenly into demitasse cups and refrigerate until chilled and up to one day
