Cold Day Soup

Quick - 30 minutes or less Total time for this recipe is 30 minutes or less.

This is a very quick little dish with outstanding flavor and only a few ingredients. Perfect for rainy or dreary weather.

1/2 head cauliflower
1/2 head broccoli, stems and florets
4 cups light chicken broth
Grated nutmeg (about 15 grates on a grater or start with 1/4 tsp ground)
Kosher salt & fresh black pepper
1/2 cup grated gruyere cheese
  • In a soup or stock pot, heat chicken broth to a low boil
  • Chop or break cauliflower into 1 inch pieces
  • Remove florets from broccoli and set aside
  • Peel and chop broccoli stems into 1/2 inch pieces
  • Add cauliflower and broccoli stem pieces to hot broth, cover and cook until tender - about 10 minutes
  • Using a potato masher, mash some of the cauliflower and broccoli pieces
  • Add florets and nutmeg and cook until florets are tender
  • Remove from heat and taste to adjust salt, pepper and nutmeg
  • Top with gruyere cheese and serve
