Cold Day Soup
Total time for this recipe is 30 minutes or
less.
This is a very quick little dish with outstanding flavor and only a few ingredients. Perfect for rainy or dreary weather.
1/2 head cauliflower
1/2 head broccoli, stems and florets
4 cups light chicken broth
Grated nutmeg (about 15 grates on a grater or start with 1/4 tsp ground)
Kosher salt & fresh black pepper
1/2 cup grated gruyere cheese
- In a soup or stock pot, heat chicken broth to a low boil
- Chop or break cauliflower into 1 inch pieces
- Remove florets from broccoli and set aside
- Peel and chop broccoli stems into 1/2 inch pieces
- Add cauliflower and broccoli stem pieces to hot broth, cover and cook until tender - about 10 minutes
- Using a potato masher, mash some of the cauliflower and broccoli pieces
- Add florets and nutmeg and cook until florets are tender
- Remove from heat and taste to adjust salt, pepper and nutmeg
- Top with gruyere cheese and serve
