Dorothy Merman's Eggplant Casserole

2 large eggplants
2 onions
1/2 - 1 lb cheddar cheese
1 8 oz. can tomato sauce
  • Peal and slice eggplants
  • Make layers with quartered onions and sliced Cheddar cheese
  • Pour 1 small can tomato sauce over top
  • Bake at 350 degrees for about 1 1/2 hour, turning over eggplant once or twice through the baking.
