Fideos & Basmati Rice

This one always impresses the guests. Fideo is a type of pasta that is browned in oil, then cooked in broth and other seasonings. Often found in spanish and some middle eastern dishes.

1/4 cup Barilla Plus Thin Spaghetti broken into 1/2 - 1 inch pieces (the Fideos)
1 cup white basmati rice
1 shallot, finely minced
1/2 tsp kosher salt
1 3/4 cups low sodium chicken broth
Olive oil
2 tablespoons unsalted butter
Salt & Pepper to taste
Fresh parsley leaves, minced
  • Heat olive oil in a saucepan over medium heat
  • Add minced shallot and 1/2 tsp kosher salt and cook until translucent
  • Add pasta and sauté until browned
  • Add rice and stir to coat with oil (add more oil if needed)
  • Cook until rice is opaque white
  • Add broth, bring to a gentle boil, cover and reduce heat to low
  • Simmer for 15-20 minutes until all broth is absorbed
  • Poke several holes through the rice and add pieces of butter
  • Re-cover and continue over very low heat until butter is absorbed
  • Taste and add salt & pepper as needed
  • Fluff and serve sprinkled with fresh minced parsley to accompany meat dishes
