Fresh Apple Cake

Make the topping just after you put the cake into the oven!

Cake
4 cups chopped apples
1/2 - 1 cup sultanas or other dried fruit
1 cup chopped walnuts and pecans
1 cup vegetable oil
4 eggs
1 tsp vanilla
2 2/3 cup all-purpose flour
2 cups sugar
1 1/2 tsp baking soda
1 tsp kosher salt
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cloves
Topping
1 tbl sugar
1 tsp ground cinnamon
    For Cake
  • preheat oven to 350
  • Combine flour, sugar, soda, salt, cinnamon, nutmeg and cloves
  • Peel, core and chop apples fairly small (about 1/4 inch dice)
  • Add apples to flour mixture
  • In a 4 cup measure, add oil, eggs and vanilla
  • Add oil mixture to apple mixture and stir to combine - this is very little batter to apples ratio so it takes care to be certain to get everything combined
  • Pour batter into a greased and floured 13 x 9 inch glass baking dish
  • Bake for about 20 minutes
    Topping
  • While cake is baking, combine sugar and cinnamon
  • After cake has baked approximately 20 minutes or so, pull it out and sprinkle the sugar/cinnamon mixture all over top
  • Replace cake in the oven and bake approximately 40-50 minutes longer, until a toothpick comes out moist but clean

    This is a great for parties cut into 2 inch squares. Very moist and amazingly delicious!
