Fresh Lemon Dressing

1 large clove garlic, mashed
1/4 cup fresh squeezed meyer lemon juice
1/4 tsp salt
Freshly ground black pepper
1/2-2/3 cup olive oil
1-2 Tablespoons chopped fresh mint leaves
- In a small mixing bowl, place mashed garlic
- Add lemon juice, salt and black pepper
- While whisking, drizzle in a very thin stream 1/2 cup of the olive
oil
- Taste and adjust seasoning - if desired add remaining olive oil
- Stir in the mint
Serve on salad greens of any type, from iceberg lettuce to mustard
greens with a shredded carrot.
