Fried Lentils



I had some cooked lentils left one day and thought lentil burgers would be nice, but then it occurred to me a dish like refried beans might be even more tasty - and you don't need a bun! Here are instructions including cooking the lentils.

1 cup green lentils, rinsed and picked over
2 cups broth
1 onion, minced
1 clove garlic, minced
Olive oil
1 tsp ground cumin
1 tsp ground coriander
2 tsp sweet chili powder
1 bay leaf
1/2 tsp kosher salt
Fresh ground black pepper
1/2 cup grated cheese (cheddar is nice, but anything will work)
1 diced roma tomato
1 minced green onion
Chopped fresh cilantro
  • Sauté onion in olive oil until just beginning to brown
  • Add minced garlic and spices
  • Cook about 2 minutes over medium to medium-high heat, stirring constantly
  • Add lentils, water and bay leaf
  • Cook until lentils are tender, but not over-soft (about 30 minutes)
  • Drain any excess liquid
  • In a non-stick skillet, heat about 3 tbl olive oil
  • When hot, add lentils, salt & pepper pressing down with the back of a spatula to cover the pan surface
  • Cook until lightly browned, turn with spatula until lentils have a light crust
  • Sprinkle cheese over top, cover with lid or foil and reduce heat to low for 5-10 minutes until cheese has melted
  • Turn off heat and top with tomato, green onion and cilantro
  • Serve hot
