Fruit Cordials

One of the first things we did when we moved in here was to start planting fruit trees. One of the things we do now is figure out how to use all the fruit we have every year. This is an easy way when I don't have time to do much int he kitchen.

Securable container (needs to have a lid that won't leak)
Fresh fruit to fill jar 3/4 full
Sugar to cover fruit
Vodka to fill container
Spices if desired
  • Clean and dry fruit.
  • Remove pits and cut large fruit into small slices or quarters depending on size.
  • Place fruit into container up to about 3/4 full, shaking to make sure it's well packed but not pressed
  • Add sugar, pouring around sides to distribute down into the spaces
  • Slowly pour Vodka over fruit and sugar up to about 2 inches above fruit (Fruit will float when adding Vodka, so note where you want to stop.)
  • Place lid securely and rotate container until all sugar is saturated with the Vodka
  • Put in a cool, dark place and rotate/turn container daily until sugar is completely dissolved
  • Let stand between 5 weeks and 3 months - taste to decide
  • Pour contents of container through a strainer lined with double thickness of cheescloth into a large bowl or pitcher
  • Gently press remaining juices from fruit, being careful not to press pulp through cheesecloth
  • Strain again if needed - cordial should be as free of pulp and residue as possible
  • Pour into permanent container

    Flavorings can be added such as vanilla or cinnamon. Use as an after dinner cordial (in tiny glasses) with dessert or over ice cream, or to dip biscotti, or ...

    Apple brandy can be made in this way using cored, chopped apples (don't peel) and brandy instead of vodka. Add a couple of cinnamon sticks, cloves and even a touch of vanilla extract if desired. This must stand for 3 months at least.
