Garam Masala

Garam Masala is a very common Indian spice blend which is added in a small amount at the beginning or end of a dish. It is a powerful blend of strongly flavored spices. You can purchase Garam Masala spice mix pre-blended or make your own. I typically purchase it (it can be found in any large market or places where Indian foods are sold.) but here are a few blends you may prefer to make yourself.

Mix One
2 parts Cinnamon
3 parts Black Pepper
2 parts Cloves
2 parts Cumin
1 part Mace
1 part Cardamom Seeds
2 parts Bay leaves

Mix Two
3 parts Black Cumin Seeds
7 parts Coriander
4 parts Cardamom
.5 part Bay leaves
5 parts Cloves
5 parts Black Pepper
1.5 parts Nutmeg
1.5 parts Mace
4 parts Cinnamon

Mix Three
30 Green Cardamom pods
15 Cloves
5 Black Cardamom pods
4 pieces Mace
4 pieces Cinnamon
5 Tbl Cumin Seed
2 Tbl Coriander Seed
1 Tbl Fennel
1 tsp Black Peppercorns
1/2 tsp Fennugreek seeds
  • Grind spices in small batches together in a clean coffee mill or mortar and pestle. Store in a cool dry place for up to three months.

    The spices may be heated in a dry skillet prior to grinding to enhance the flavor and make them easier to grind.
