Ginger Tea

This is a recipe from an indian cookbook I have that saved my sanity one very cold year. Ginger is a very warming spice, and this tea really does warm you up nicely with a residual warmth as you are digesting it. I like to use Orange Blossom Honey in this.

1 1/2 - 2 inch piece of fresh ginger
4 cups water
Honey (optional)
  • Peel and slice ginger
  • Place ginger and water into a small saucepan, bring to a slow boil, reduce heat and simmer for 10 minutes (light tea) or up to 15 minutes (medium tea)
  • Pour into a cup and add honey if desired
