Goat Cheese & Fig Jam Toasts

Serve this unusual dish after dinner with a nice dessert wine or sparkling wine. It also makes an elegant appetizer. These can be something your guests put together and eat, or you can prepare a tray in advance, fully 'dressed'. I like to use Cloverdale Wildflower honey or Orange Blossom honey.

8 oz. plain chevre
1 lb fresh ripe black mission figs
1 tsp fresh thyme leaves
2 tbl honey
1/4 cup water or 2 tbl water & 2 tbl fruity white wine
pinch salt
1 sourdough baguette, sliced and toasted
Additional thyme leaves, thyme blossoms, chopped chives, grated lemon rind for garnish
  • Bring goat cheese to room temperature (or warm slightly in the microwave)
  • Remove stems from figs and cut into quarters and place into a small saucepan
  • Add honey, thyme, water and wine if using
  • Bring to a low boil, reduce heat and simmer until figs have broken down and the jam is thickened
  • Allow to cool to room temperature
  • To serve, spread some goat cheese on a toasted crostini, place a teasponful of jam on top, garnish
