Grapefruit & Avocado Salad

Sections from 2 small to medium grapefruit
2 avocados, peeled, pitted and thinly sliced (sprinkle with lemon juice to
prevent browning)
Salad greens of choice
1/4 cup grapefruit juice
2 tbl white wine vinegar
1/2 cup olive oil
1/2 tsp kosher salt
- In a bowl, whisk together grapefruit juice, vinegar and salt
- While whisking, add olive oil in a thin stream until emulsified
- Remove the pits from the olives and quarter them
- To arrange the salad, lay out the salad greens on a large
platter
- Top with grapefruit and avocado slices
- Drizzle with dressing
