Grilled Peaches with Italian Cream

Quick - 30 minutes or less Total time for this recipe is 30 minutes or less.

This is so delicious your guests will be requesting it. Very simple and quick.

Serves 4.

4 medium to large fresh peaches
1 8oz. tub Marscapone cheese
3 tbl honey
1/4 cup toasted, chopped walnuts
1 cup fresh red raspberries or other fresh berry (Optional)
Fresh mint leaves (Optional)
  • Combine Marscapone cheese with honey
  • Cut peaches in half and remove pit
  • Brush rack over medium hot grill with oil
  • Place peaches, skin side down on oiled grill
  • Brush cut side of peaches with oil
  • Cook two minutes, then turn and grill cut side for 2-3 minutes until peaches become slightly tender
  • Remove peaches to a serving plate and spoon 1 1/2 tablespoons cheese mixture into cavity
  • Sprinkle chopped nuts over top
  • If using raspberries, arrange on top and around serving tray
  • Garnish with a few fresh mint leaves or sprigs if desired
  • Serve warm

    Note: The cheese can be blended ahead and refrigerated for up to 2-3 days. The peaches can be grilled earlier in the day to be served and refrigerated, then reheated for about 1 minute in the microwave just before assembly.
