Grilled Peaches with Italian Cream
Total time for this recipe is 30 minutes or
less.
This is so delicious your guests will be requesting it. Very
simple and quick.
Serves 4.
4 medium to large fresh peaches
1 8oz. tub Marscapone cheese
3 tbl honey
1/4 cup toasted, chopped walnuts
1 cup fresh red raspberries or other fresh berry (Optional)
Fresh mint leaves (Optional)
- Combine Marscapone cheese with honey
- Cut peaches in half and remove pit
- Brush rack over medium hot grill with oil
- Place peaches, skin side down on oiled grill
- Brush cut side of peaches with oil
- Cook two minutes, then turn and grill cut side for 2-3
minutes until peaches become slightly tender
- Remove peaches to a serving plate and spoon 1 1/2
tablespoons cheese mixture into cavity
- Sprinkle chopped nuts over top
- If using raspberries, arrange on top and around serving tray
- Garnish with a few fresh mint leaves or sprigs if desired
- Serve warm
Note: The cheese can
be blended ahead and refrigerated for up to 2-3 days. The
peaches can be grilled earlier in the day to be served and refrigerated, then
reheated for about 1 minute in the microwave just before
assembly.
