Heavenly Shrimp

Tons of flavor! The name comes from the angel hair pasta, but this is a heavenly
dish; it's very quick and easy and deliciously light. You can
substitute soy margarine and leave out the parmesan for a perfect
dairy free dish.
1 lb shirmp, peeled and cleaned
2 Tbl olive oil
2 Tbl Butter
3/4-1 cup chicken broth
2 large garlic cloves, smashed but intact
1/2 lb snow peas (you can substitute fresh or frozen green peas)
2 cups chopped roma tomatoes
2-4 Tbl grated parmesan cheese (optional)
3/4 lb. Barrilla Plus Angel hair pasta (capellini)
- Cook pasta in boiling, salted water for 4 minutes
- Drain well and set aside
- In a large skillet, melt butter in olive oil
- Add garlic and heat over low heat, occasionally turning the cloves so
they do not brown. Leave for about 4-5 minutes to infuse the oils.
- Remove garlic and discard. Increase heat to med-high
- When oil starts to sizzle, add shrimp and cook for about 1 minute,
then turn
- Add snow peas and chicken broth. Cook about 2
minutes
- Add pasta and tomatoes to the skillet and mix well. Continue cooking until the
pasta and shrimp are cooked to your taste.
- Turn off heat and top with parnmesan
- Mix parmesan into the dish and serve
