Melinda's Italian Style Meatloaf
1 1/4 - 1 1/2 lbs ground beef
1/4 - 1/3 lb sweet italian bulk sausage with fennel
1 onion, finely diced
1/4 cup red bell pepper, finely diced
1 stalk celery, finely diced
2-4 cloves garlic, minced
Simple Marinara sauce made with tomato paste
1 tbl worcestershire sauce
1 tsp dried crushed basil leaf
Kosher salt
Ground black pepper
Olive oil
- Preheat oven to 350º
- Heat 1 tbl olive oil in a skillet over medium heat
- Add onion, bell pepper and celery
- Sauté with 1/2 tsp salt until translucent and beginning to brown - add a small amount of water if it browns too quickly
- Add minced garlic and stir to combine
- Turn off heat and allow to cool slightly
- In a large bowl combine ground beef and ground sausage distributing the sausage well
- Add 1/2 the onion mixture, 1/3 cup marinara sauce, worcestershire, 1/2 tsp salt, 1 tsp ground black pepper and dried basil and gently combine well
- Brush a bit of olive oil in the bottom of a 7 x 11 x 2 inch baking dish
- Place meatloaf mixture into the dish and form into a loaf that is level on top - about 2 inches high
- Spoon remaining onion mixture around the edges and drizzle all with olive oil
- Grind lots of black pepper over the top and bake for 30 minutes
- After 30 minutes, spoon some marinara sauce all over the top and reverse the pan inside the oven
- Continue baking for another 30 minutes until meat is done in the middle
- Serve with the remaining marinara sauce
