Blue Cheese Lamb Burgers



This can be done in a small size or regular size - or even jumbo size if you want. Makes 4 regular burgers, or 8 small (or 2 jumbo!).

1 pound ground lamb - you can make your own if you have a food processor using lamb sirloin
1/2 yellow onion, grated
1 tbl fresh minced parsley
1 tbl fresh thyme
1 large clove garlic, grated
1 tbl worcestershire sauce
1 tsp kosher salt
Fresh ground black pepper

2 red bell peppers, seeds & stem removed and sliced into thin strips
1 sweet onion, cut in half and sliced
1 tsp kosher salt
Fresh ground black pepper
4 oz. blue cheese
  • In a mixing bowl combine first 8 ingredients (above the line) blending very well - set aside
  • Sauté bell pepper and onion with salt & pepper until softened and lightly browned - keep warm while cooking burgers
  • Form lamb mixture into burgers
  • Over high heat, sear one side of burgers, then turn and reduce heat to medium-high
  • When browned on both sides, reduce heat to medium and cook until medium or desired doneness
  • Turn off heat leaving pan in place
  • Divide blue cheese and place equal amount on top of each burger
  • Cover pan with lid or foil and let stand for 3-5 minutes until cheese is softened
  • Divide vegetables between 4 plates and top with burgers

    Serve with salad or bread
