Stuffed Lamb Roll

You can use any vegetable or combination of vegetables you choose.
I find the cheese unnecessary with the cauliflower, but it might
liven up some vegetables. If you use the cheese, cut amount of salt in
filling portion of recipe in half.
Serves 4.
Lamb Mixture
1 lb ground lamb
1/2 onion grated
2 lg cloves garlic, minced
1 1/2 tbl minced parsley
1 tsp ground allspice
3/4 tsp kosher salt
Filling
2 cups cauliflower, cooked for 3 minutes, then chopped
2 tbl fresh herb
1/4 cup grated cheese (optional)
1 tsp kosher salt
- Preheat oven to 350º.
- mix filling ingredients and set aside
- combine all lamb roll ingredients and mix very well
- press lamb mixture out onto a piece of aluminum (oil the foil if your lamb is extra lean)
- press into a rectangular shape about 1/3-1/2 inch thick
- place filling on the top third of the rectangle, leaving at least 1 inch edge
- using the foil, begin rolling the top toward the bottom keeping the filling inside with your fingers
- seal the ends by pressing together
- place roll onto a broiler pan or on a rack in a baking dish
- press firmly to shape into a compact log
- bake at 350 for 45-50 minutes
- remove and let stand about 10 minutes
