Lemon Chess Pie

This is the easiest pie recipe I have ever made.

1 recipe single crust pie pastry
2 cups sugar
2 tbl cornmeal
1 tbl flour
4 eggs
1/4 cup melted butter
1/4 cup milk
1/4 cup lemon juice
Zest from 2 lemons
  • Preheat oven to 425º
  • Combine sugar, cornmeal and flour
  • Add eggs one at a time, mixing well
  • Add butter, milk, lemon jiuce and lemon zest and combine well
  • Pour into unbaked pie crust
  • Bake for 45 minutes, until knife inserted in center comes out clean

    I use Pillsbury Pie Crusts that I purchase in the refrigerator section, rather than make the pastry from scratch.
