Lemon Pea Crostini

1 cup fresh english peas
1 fresh meyer lemon
1 tsp - 1 tbl honey
1/4 cup chevre goat cheese
Kosher Salt & Pepper
12 slices Crostini
  • Boil peas about 4-5 minutes until just cooked
  • Grate 2 tsp lemon zest, then cut lemon in half and squeeze juice
  • In a mixing bowl combine cooked peas and goat cheese
  • Add 2 tsp lemon juice, 1/2 tsp kosher salt and mash together - it doesn't have to be completely homogenized
  • Add 1 tsp honey, combine well and taste
  • Add more lemon juice, honey, salt & pepper to taste
  • Spread mixture on crostini and sprinkle each with a pinch of lemon zest
