Lentil Taco Salad



We use this lentil mixture for real tacos as well, but it makes a very nice salad. I like two of Trader Joes salsas for taco salad. One is a bottled red medium salsa and the other is the fresh roasted tomato salsa. Get extra and serve with some blue corn chips.

1 cup lentils
2 cups vegetable broth
1 tsp ground cumin
1 tsp ground coriander
1 tbl chili powder
1 tsp garlic powder
1 tsp onion powder
1 tsp hot chili flakes
2 cups chopped cabbage
1 cups chopped iceburg lettuce
2 carrots shredded
1 diced avocado
2 cups grape or cherry tomatoes
2 green onions, sliced
Fresh corn kernels (optional)
1/2 cup fresh chopped cilantro
Favorite salsa for dressing
  • Cook lentils with spices in vegetable broth until done - follow package instructions
  • Combine cabbage, lettuce and shredded carrot
  • Add avocado, tomatoes, onion, corn and cilantro
  • Place cabbage mixture onto a serving platter and top with lentils
  • Serve with salsa on the side for dressing
