Mahi Mahi with Crab & Spinach

Contributed by: Melinda

12 - 16 oz Mahi Mahi fillets, cut into 3-4 inch pieces
3/4 - 1 cup lump crab meat
1 1/2 cups cooked spinach
1 tbl minced red bell pepper
2 tbl minced shallot
4 tbl grated romano cheese
grated nutmeg to taste
1 egg, beaten
2-3 tbl cream or milk
Kosher salt & Fresh ground black pepper
Olive Oil
  • Preheat oven to 400º
  • Salt & pepper both sides of fillets
  • Brush a baking dish with olive oil and add fish fillets, turning to coat with oil
  • Press out any liquid from spinach and break it up (should be fairly dry)
  • In a bowl combine spinach, crab, bell pepper, shallot, 2 tbl romano cheese and nutmeg
  • Combine well, trying not to break up the crab too much
  • Add egg and enough cream to make a soufflé like consistency
  • Divide the crap mixture evenly on top of each fillet
  • Sprinkle tops with remaining cheese
  • Bake 30 minutes (depending on thickness of fillets) until fish is cooked
