Mexican Fruit Cake

I don't know the exact history of this cake, but one of Frank's grandmother's friends used to make it for her from time to time.

Cake

1 20 oz can crushed pineapple - undrained
2 cups flour
1 cup chopped nuts
2 tbl soda
2 cups sugar
2 eggs

Frosting

6 oz. cream cheese
1 cup powdered sugar
2 tbl warm melted butter
1/2 tsp vanilla
  • Mix all cake ingredients together
  • Put into a greased & floured 9 x 13 in. pan
  • Bake at 350 for 30 - 35 minutes
  • Mix frosting ingredients together
  • Cool cake and frost
