How to Make Soup Creamy without Dairy



To make soup creamy without adding cream or milk, add one or two yukon gold potatoes to the water or broth at the start.

When vegetables are cooked, set aside any meat or vegetables you want to retain their shape. Add potatoes and broth to a food processor and adding a little olive oil process until smooth and silky. This will produce a thickened and creamy texture. Return vegetables and/or meat to soup and reheat if needed.
