Mushroom Gravy

This recipe is great for keeping to the lower GI foods and suitable for a diabetic diet.

1/2 pound fresh crimini mushrooms, thinly sliced
2 cups beef broth
1 large shallot, minced (2 tablespoons)
1 garlic clove, minced
2-3 Tbl Besan*
Olive Oil
Salt & Pepper
  • In a medium skillet or sauce pan, over medium heat, sauté shallots and garlic in about 2-3 Tablespoons of olive oil - do not brown
  • Add mushrooms - do not salt - and allow to brown slightly
  • Sprinkle Besan over the vegetables and cook for about 1-2 minutes
  • Add about 1/4 cup of the broth and stir until lumps have dissolved
  • Add the remainin broth a little at a time, making sure to stir out all lumps before adding more
  • Once all the broth has been added, add salt & pepper
  • Cook until thickened

    Server with meat or as a vegetarian sauce

    *Besan is ground chickpeas and can be purchased online or at a local indian market. When used in gravy or sauces, there is no distinguishable flavor. It is also excellent used to make Onion Bhaji's. Recipe available soon
