Oatmeal Pancakes

This has turned out to be our favorite recipe for pancakes
2C buttermilk
2/3C old fashioned rolled oats
1 egg
2TBS. brown sugar
1/3C. all-purpose flour
1/2C. whole wheat flour
1tsp. baking soda
2TBS. vegetable oil
- The night before making pancakes, mix buttermilk and oats together in
bowl. Cover and refrigerate.
- Next morning, beat egg in mixing bowl and stir in brown sugar. Add
flours, baking soda, oil and oatmeal-buttermilk mixture. Mix
thoroughly.
- Heat griddle or skillet sprayed with non-stick solution and drop
batter by tablespoons onto griddle. Brown on each side and keep warm in
a slow oven.
Makes about 12 (4-inch) pancakes.
