Orange & Olive Salad

Serves 4 and is easily multiplied to serve more.
5 oranges
1/2 cup cured olives such as kalamata
1/4 lb. Serrano Ham, cut into slivers
1/4 cup toasted, chopped almonds
1/4-1/2 cup chopped fresh parsley or 8 fresh mint leaves
Kalamata olive oil
Kosher salt & black pepper
- Remove ends from 4 of the oranges and peel them
- Cut peeled oranges into 1/4 inch thick slices
- Arrange slices on serving platter
- Scatter olives and ham slivers over the top
- Cut remaining orange in half and squeeze juice over the salad
- Drizzle with olive oil and sprinkle with chopped almonds and
herb
