Pear Plum Pie

1 recipe Plain Pastry for double crust pie
4 medium bartlett pears, peeled, cored and sliced
1-2 cups fresh prune plums, seeds removed and cut into halves or quarters
1/2 cup brown sugar
1/4 cup cornstarch
2 tsp cinnamon
1/4 tsp salt
1/4 cup brandy
1 egg beaten with 1 tbl brandy
  • Line a 9 inch pie pan with pastry
  • In a large bowl combine pears, plums, sugar, cornstarch cinnamon and salt - mix thoroughly
  • Add brandy, stir and allow to stand about 10 minutes
  • Spoon filling into pan and cover with top pastry
  • Trim and crimp edges and brush with beaten egg
  • Cut a few vents into upper crust and bake at 375 about 50-60 minutes, until golden brown and pears are soft.

    I use Pillsbury Pie crusts from the refrigerator section rather than make my own pastry.
